Paper Son Coffee does it all. The coffee popup excels at drinks with additional flavors, such as the frothy, pandan-flavored Aerocano ($6.50), made by aerating an Americano with the steam wand to create a creamy mouthfeel — like faux nitro cold brew. For something fruity, sample the Guava Pillow ($6.50), a bubbly caffeinated beverage topped with a pink, guava-flavored cloud. Approachability is a central tenet for owner Alex Pong, offering something for any amount of coffee literacy. But purists should visit on Sunday, when Paper Son highlights special, occasionally rare, coffees from local roasters. The popup has a residency at Neighbor Bakehouse, a bakery in San Francisco’s Dogpatch, and a temporary outpost downtown.
